Place tomatoes, cut side up, in a shallow baking dish that is large enough to hold all the tomatoes in one layer. Push the whole, unpeeled garlic cloves in between the tomato halves. Mix together the extra virgin olive oil, balsamic vinegar and sugar and sprinkle the surface of the tomatoes with mixture. Bake for 45 minutes until the tomatoes are softened and caramelised. Serve sprinkled with chopped fresh basil or parsley.
