Cover several large baking trays with baking paper. Beat the egg white with electric beaters until stiff. Fold in the sugar, almonds and lemon juice. Place heaped teaspoons of the mixture onto the baking trays, well apart from each other. Bake for about 20 minutes, until lightly coloured. Leave to cool and store in an airtight container.
