Add pepper to taste. Divide the mixture into 6 portions and shape into patties. Heat the extra virgin olive oil in a frying pan over medium-high heat. Cook patties for approximately 5 minutes each side or until golden and cooked through. Meanwhile, split and toast the buns. To serve, spread the buns with avocado and assemble with spinach, tomato, capsicum and a cooked chicken patty.
