In a bowl, mix the ground almonds, sugar and cinnamon together. In a separate bowl, whisk the egg whites with an electric beater until they begin to form stiff peaks (don’t beat too much or they will separate). Carefully fold in enough of the almond mix to the egg whites to make a firm dough. Roll teaspoons of the mixture into small balls and place on the baking tray (wetting your hands can help stop the mixture sticking to them). Bake in the centre of the oven for about 15 minutes – they should be slightly soft on the inside otherwise they will be tough. Leave to cool on the tray. Once cool they can be frozen or stored in an airtight container.
