Cut 4 x 30cm squares of foil and grease it with extra virgin olive oil. Place a piece of the fish in the centre of each square. Fold up the edges of each piece of foil. Top each piece of fish with the ginger, lemongrass and sliced vegetables. Whisk together the fish sauce, sesame oil, lime juice and minced chilli. Pour the sauce over the fish. Seal the fish in the foil and place on a baking tray. Bake in the oven for 10-15 minutes or until nearly cooked through. Serve the fish garnished with fresh coriander with steamed or stir-fried vegetables.
