Crack the eggs into the pan and fry until desired consistency. Drizzle the fish sauce over the eggs while they cook. Place the sliced tomatoes on the baguette or bread, you can drizzle the bread with more olive oil if desired and add cooked eggs. Sprinkle with black pepper. Garnish with fresh coriander. Healthy tip: Use garlic oil instead of olive oil to pack in some extra flavour.
