- 150g vermicelli rice noodles
- 200g beef, thinly sliced (choose lean options)
- 2 tablespoons olive oil
- 1 clove garlic, minced
- 1 tablespoon fish sauce
- 1 teaspoon low sodium soy sauce or tamari
- One quarter teaspoon black pepper
- One quarter cucumber, thinly cut
- 1 small carrot, thinly cut
- One quarter cup fresh coriander chopped
- One quarter cup mint leaves chopped
- 1 tablespoon spring onion (for topping)
- 1 tablespoon peanuts (for topping)
For dressing:
- 2 tablespoons fish sauce,
- 1 tablespoon lime juice,
- One quarter cup water,
- 1 clove garlic, minced,
- 1 red chilli, chopped
- In a bowl, combine the sliced beef with the minced garlic, fish sauce, sugar, soy sauce, black pepper.
- Let it marinate for 15 to 20 minutes.
- Heat the oil in a grill pan. Grill the marinated meat on each side or until cooked and charred.
- Meanwhile, cook the vermicelli noodles according to package Method, then drain.
- To make the dressing: In a small bowl, whisk together the fish sauce, lime juice, water, minced garlic and chilli.
- Divide the cooked vermicelli noodles between bowls.
- Top with the grilled meat, cucumber, carrot, fresh coriander, and mint leaves. Drizzle with the dressing.
- Garnish with spring onion and roasted peanuts.
Healthy tip: You can replace the beef with your favourite protein or what you have available. Tofu, chicken, fish or prawns all work well and are great options.
