Pepper, to taste Flour for coating 1 egg, lightly beaten 1 cup fresh breadcrumbs One quarter cup extra virgin olive oil Cook potato in boiling water until tender. Drain well and mash. Add the lentils, almond meal, chopped onion, garlic and herbs to the potato. Mix well. Form mixture into patties. Dip each patty first into some flour, then into the beaten egg and then into the breadcrumbs to coat well. Heat extra virgin olive oil in a frying pan over medium heat. Fry patties for about 5 minutes on each side or until crisp and golden. Serve with salad or in a burger.
