150g diced beef, lamb mince or chicken thigh (choose your favourite protein or what you have available, preferably lean varieties and remove the fat and skin)
2 tablespoons olive oil
1 garlic clove, minced
1 small red onion, cut into wedges
1 zucchini, sliced
1 capsicum, sliced
1 sweet potato, cubed
1 teaspoon ground cumin
Half teaspoon smoked paprika
Salt and pepper, to taste
1 tablespoon chopped parsley and coriander
Greek yoghurt to serve
Multigrain pita bread (optional)
Preheat oven to 200°
Place meat and vegetables on a lined baking tray.
Drizzle with olive oil and sprinkle with garlic, cumin, paprika, salt and pepper.
Mix everything to coat evenly.
Roast for 25 to 30 minutes or until meat and veggies are cooked.
Top with herbs and serve with a dollop of Greek yoghurt.
You can also warm up some pita bread on the side as an option for a more filling meal.
