All ingredients are available in most supermarkets.
In a small pot, combine the rinsed basmati rice, corn, and water. Bring to a boil over medium heat.
Once boiling, reduce the heat to low, cover, and cook for about 10 to 12 minutes, or until the water is absorbed and the rice is cooked.
Turn off the heat and let the rice sit, covered, for another 5 minutes to finish steaming.
Fluff the rice and corn gently with a fork.
Drizzle with 2 tablespoons olive oil, add fried onion
Lightly pan-fry tofu with oil until golden on both sides, add salt and pepper to taste.

Healthy tip: You can purchase ready-made, marinaded tofu in your preferred flavours, this can be added directly to the corn and rice as an alternative.
