½ cup coarse semolina (usually in the health food aisle of supermarkets)
3 cups reduced/low fat milk
¼ cup almond meal
1 teaspoon grated orange rind (optional)
Pinch of cinnamon
¼ cup chopped almonds (or other nuts)
1 tablespoon honey
Berries or other chopped fresh fruit, to serve
Place semolina, milk, almond meal, orange rind and cinnamon in a saucepan over medium heat.
Bring to the boil slowly, stirring well.
Reduce heat and allow the mixture to simmer gently for about 10 minutes until thickened and cooked. Stir frequently to prevent sticking and burning (be careful as mixture may spit).
Stir in the honey.
Divide the mixture between 4 bowls. Sprinkle each bowl with chopped nuts and then add fresh fruit.
