Add the onion and capsicum and cook until softened. Stir in the garlic and cook for another minute. Add the tomatoes and paprika. Season with salt and pepper and cook until the mixture is thickened. Crack in the eggs and stir gently to scramble through the tomato mixture. Garnish with parsley, feta and chilli flakes (optional), and serve with warm multigrain pita bread.
