180g can tuna in olive oil or spring water (add your own olive oil if you choose the latter) or if you don’t like tuna – you can swap with deli shredded chicken, boiled eggs or your preferred protein
In a bowl, combine black eyed peas, diced tomato, cucumber, onion, parsley and mint.
In another bowl, whisk together lemon juice, olive oil, salt and pepper and set aside.
Add grilled deli chicken or tuna as per preference to your salad.
