Once combined, place the mixture in the fridge for 1 hour or until firm. Crack a second egg into a small bowl and beat well with a fork. Take tablespoons of the mixture and form into balls. Roll each ball in the beaten egg and then coat with breadcrumbs. Shallow fry in extra virgin olive oil, until golden. Serve with lemon wedges and salad.
