Add zucchini and eggplant around the fish. In a small bowl, mix olive oil, garlic, ginger, soy sauce or tamari, lemon juice, sesame oil, smoked paprika and a pinch of salt and pepper. Drizzle the sauce evenly over the fish and vegetables. Mix the vegetables gently to coat. Bake for 15 to 20 minutes or until the fish flakes easily and the veggies are tender. Serve with rice if wanted and top with fresh coriander.
