Instant microwave rice is also fine 2 tablespoons olive oil Half teaspoon mustard seeds Half teaspoon cumin seeds 1 small onion, finely sliced 2 garlic cloves, minced 1 cup chopped tomato One quarter teaspoon turmeric powder Half teaspoon ground coriander Half teaspoon garam masala or ground cumin Salt to taste 1 tablespoon chopped coriander Half small lemon 1 cup Greek yoghurt to serve on the side Heat oil in a pan. Add mustard seeds and cumin seeds, let them pop. Add onion and green chilli. Sauté for 3 minutes until onion softens. Stir in garlic, then add chopped tomatoes. Cook for 6 minutes until tomatoes become like a pulp. Add turmeric, ground coriander, garam masala, and salt. Cook for another minute. Add cooked rice and mix gently until the rice is well coated. Stir through chopped coriander and squeeze half a lemon, serve with Greek yoghurt. Healthy tip: Feel free to add a can of tuna or salmon or sardines to the rice for added protein.
