4 slices of thick crusty wholemeal or sourdough bread
Half an avocado, mashed
100g chicken breast, shredded (skin and fat removed)
Half a large tomato, sliced thinly
4 baby cos leaves or shredded iceberg lettuce leaves
Extra virgin olive oil
Heat a sandwich press or frying pan over medium heat.
Generously brush both sides of the bread with extra virgin olive oil and place in the sandwich press or frying pan, oiled side down.
Cook both sides until golden.
To assemble, spread one slice of the bread with half of the avocado, then put on half the chicken, half the tomato slices and 2 cos leaves. Finish with another slice of bread.
