PrepPreparation time15 minutes CookCooking time15 minutes ServesServes2 Nutrition (per serve)Nutrition (per serve)Protein: 22gSodium: 1000mg Classic WesternDinnerLunchVegetarian Email recipe Share on Facebook Print Ingredients Method 200g mushrooms, chopped finely 1 cup cooked brown lentils, or 1 can lentils (rinsed and drained well) Breadcrumbs (as needed) One quarter onion, grated 1 garlic clove, minced One quarter teaspoon paprika Salt and pepper 2 tablespoons olive oil 2 wholemeal or wholegrain burger buns Salad leaves, tomato slices, onion, cucumber – chop how much you want in each burger Avocado spread (or smashed avocado) (optional) Salad leaves (prepacked mixes or lettuce are all good options) Heat olive oil in a pan and cook the onion for 3 to 4 minutes, add garlic and mushrooms and cook out the mushroom until it releases water. Add the paprika, salt and pepper and cook for another minute. In a bowl, mash the lentils roughly and add in the mushroom, and ad salt and pepper to taste. Add breadcrumbs until the mixture is dry enough to form into patties. Shape into patties. Heat oil in pan and cook patties 4 to 5 minutes per side or until browned and cooked through. Toast buns. Layer salad leaves, patty and avocado. Serve with side of mix salad leaves dressed with your favourite dressing.
