Tuna & Black Eyed Pea Salad

Ingredients
- 1 can black eye peas (rinse well)
- 1 tomato, diced
- Half cucumber, diced
- One quarter red onion, diced
- 2 tablespoons chopped fresh parsley
- 1 tablespoon chopped mint
- Juice of 1 lemon
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 40 g or 2 tablespoons crumbled feta
- 180g can tuna in olive oil or spring water (add your own olive oil if you choose the latter) or if you don’t like tuna – you can swap with deli shredded chicken, boiled eggs or your preferred protein
Method
- In a bowl, combine black eyed peas, diced tomato, cucumber, onion, parsley and mint.
- In another bowl, whisk together lemon juice, olive oil, salt and pepper and set aside.
- Add grilled deli chicken or tuna as per preference to your salad.
- Pour dressing over the salad and mix to combine.
- Sprinkle with feta and serve.
