Tuna & Black Eyed Pea Salad

Serves 2

Ingredients 

  • 1 can black eye peas (rinse well)
  • 1 tomato, diced
  • Half cucumber, diced
  • One quarter red onion, diced
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped mint
  • Juice of 1 lemon
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 40 g or 2 tablespoons crumbled feta
  • 180g can tuna in olive oil or spring water (add your own olive oil if you choose the latter) or if you don’t like tuna – you can swap with deli shredded chicken, boiled eggs or your preferred protein

Method 

  1. In a bowl, combine black eyed peas, diced tomato, cucumber, onion, parsley and mint.
  2. In another bowl, whisk together lemon juice, olive oil, salt and pepper and set aside.
  3. Add grilled deli chicken or tuna as per preference to your salad.
  4. Pour dressing over the salad and mix to combine.
  5. Sprinkle with feta and serve.
