PrepPreparation time CookCooking time ServesServes Nutrition (per serve)Nutrition (per serve)Protein: gSodium: mg DinnerIndian SubcontinentLunchSide DishVegetarian Email recipe Share on Facebook Print Ingredients Method 500g English Spinach 1 tsp ghee or butter 2 TBSP of extra virgin olive oil 2 onions or 1 large leek, finely sliced (make sure you wash the leek well after slicing to remove any sand) 2 tsp minced garlic, or 2 garlic gloves, finely chopped. 1 tsp grated ginger 1 tsp cumin seeds ½ tsp black or yellow mustard seeds ½ tsp ground coriander ½ tsp ground turmeric ½ tsp minced red chilli (optional) Wash the spinach well. Heat the olive oil and ghee in a large pan or frying pan over medium heat, then add the onion, garlic, ginger and chilli. Stir for a minute or two until the onion is soft and has started to turn brown. Add the seeds and ground spices and stir well. Add the damp spinach and mix well through the spice mixture. Turn the heat down to low and cook well, stirring regularly until the spinach has softened and cooked down. Serve with rice or breads and other curries.
